The Darien High School China Care Club’s fifth annual pie drive is up and running! The pre-Thanksgiving drive gives students, faculty and community members the chance to order their apple, pumpkin and pecan pies early and have the proceeds benefit a good cause.
The Darien club members estimate they’ll sell 240 pies, but any unsold pies won’t go to waste - they will be donated to local Connecticut homeless shelters.
Even though it is challenging for club members to make hundreds of pies while juggling school work, athletics and college applications, club member Perrin Brown says, “We always end up having fun making the pies and giving back.”
The club is also selling necklaces they designed with the school's mascot as Christmas presents to raise even more money for China Care’s children over the holiday season.
Below is a recipe for the club’s signature Pecan Pie – Enjoy!
2 sticks of butter
2 cups of sugar
2 cups of Karo dark corn syrup
3 tsp vanilla
4 cups of chopped pecans
Mix butter, sugar, syrup and vanilla with a mixer. Gently beat in the eggs.
Pour mixture into two pie shells and then add the pecans to the top. Bake for 40-50 minutes in a 375 degree oven on the rack at the bottom.
